I’m not sure if it is the fact these are simply scrumptious biscuits or the fact we hand them out half way through activities and so people are just grateful for that sugar hit, but there is a sure lot of love for my ginger biscuits! So here it is, check out the recipe below and Get Baking..!

Ingredients

350g self-raising flour

Pinch of salt

200g caster sugar

1 tablespoon of ginger

1 teaspoon of bicarbonate of soda

125g butter

75g of golden syrup

1 egg

1 teaspoon of orange rind

  1. Sieve the flour, salt, sugar, ginger and bicarbonate of soda into a large mixing bowl

  2. Heat the butter and golden syrup together in a saucepan over a very low heat until the butter has melted

  3. Leave the butter mixture to cool slightly and then pour on to the dry ingredients

  4. Add the egg and orange rind and mix thoroughly

  5. Using your hands shape the mixture into balls

  6. Place the balls well apart on baking trays and then flatten with your hand

  7. Bake in a pre-heated oven 160 degrees/325 fahrenheit/gas mark 3 for 15- 20 minutes

Top tip: They can be frozen!
